Low-Carb Creamy Garlic Tuscan Chicken Thigh

Servings: 4

Ingredients:

Four chicken thigh pieces

One teaspoon olive oil

One cup bone broth (low sodium)

¼ cup tomatoes (sun-dried)

Three garlic cloves (chopped)

2, ½ cup spinach (fresh)

4 ounces of cream cheese

Two teaspoons of Italian seasoning

¼ cup parmesan cheese (sharply grated)

1 cup of almond milk (unsweetened)

One tablespoon of chicken seasoning

½ teaspoon xanthan gum

Two tablespoons of heavy whipping cream

Salt and pepper, as you like

Directions

Cover the chicken with salt, pepper, and Italian seasoning and make sure the chicken is pat dry.

Turn on your instant pot and select the saute option. Add oil and marinate the chicken in it. Cook the chicken until it's appropriately browned from both sides.

Then add broth, chicken seasoning, and milk into the pot. Lock the lid and cook it on high pressure for 14 minutes.

Release the steam quickly.

Unlock the lid and take the chicken out from the pot. Now add cream cheese, tomatoes, garlic, parmesan cheese, and spinach in the instant pot and sauté it spinach is wilted, and cheese is fully melted.

Add the xanthan gum to thick the sauce.

Pour the sauce over the chicken. Enjoy.
